Progress on the 6 inch cake front: after looking in stores locally, I ordered two 6 inch “Fat Daddio” cake pans from Amazon.
Now that I have the pan, I’ve picked out and plan to make on Saturday https://www.dessertfortwo.com/mini-vanilla-cake/
It has a buttercream frosting right with the cake recipe. I know cream is better, but I’m going to use milk instead, rather than get a whole carton of cream to use one tablespoon from it.
I remembered one of the pages I’d read about 6 inch cake recommending using half a cupcake recipe (I think). In any case, that lead me to find that while nobody is making 6 inch cakes, there are plenty of recipes for 6 cupcakes. So.

Pretty great, right?
These Chicken Salad Croissants from Life in the Lofthouse look like the best parts of a salad and a sandwich. Those grapes. I was taken aback for a moment when it said recipe prep time is 6 hours, but apparently you should make it ahead to allow the flavors to mix?

Broccoli Rice Casserole from Spend with Pennies looks very tasty, largely because of the homemade cheese sauce. I do like broccoli, and rice, and cheese. What more could you ask?

I purchased the ingredients today for Spend With Pennies Blueberry Cobbler. I may halve the recipe, though it’s only in an 8×8 pan. I’ve nice fresh blueberries, and will let you know how it goes!

I guess it’s Spend with Pennies week, because I also bought the ingredients for her Baked Spaghetti Casserole, definitely halving the recipe, but it looks so good.
